Outside of the guys who already have who else would be eligible? Could Spencer Lee compete for France? AJ Ferrari, Austin DeSanto and Nick Suriano for Italy like Realbuto?

I don't see Ferrari going for Italy unless he is banned from the US team.

They aren't defecting. They keep American citizenship or move to obtain citizenship in their new country. it isn't like Cubans and Russians defecting. Not even close.

From an interview I recently saw with Pico, forgot who did the interview , he said he’s open to trying to compete for team Mexico if he can’t get a fight soon. Mentioned RBY, Gomez and Valencia as already competing for them. Said if he were to go that route he would most likely have to face Gomez for the spot. Found that interesting that he might make a comeback.

Pico would need to make some lifestyle changes.

He missed 145 on day before weigh-ins a few fights ago, didn't he?

And that is like ~34 hours, not 24 hours.

Wouldn't know why not.  You should also be able to wrestle for any country to which folks migrated from the non existing country.  Also in your specific case any country that still eats potatoes.

I think Spencer would be eligible for Canada, never heard France. 

Do the Italians you named have a grandparent from Italy? 

I know a big name who looked into Germany, but I think he'd have to give up his US citizenship to get German
