Other than Cornell or over these Covid years, very rarely that I recall. It generally seemed to be highly touted recruits who didn't have success, took time off and came back. 

Can't think of a NC who did it, but...how often has a guy had an extra year to make that decision?

I’m hoping he gets a chance to redo the end of his college career and this time doesn’t place his shoes at the center of the mat and walk away. He was what, 21 when he made that last decision?

He also, save from 45 seconds of brain fart against Petro, showed he was levels above the competition in Tokyo.  Many before have taken off significant time in a cycle and come back to win another gold.
