Don’t they need to have an Italian grandparent or something to be eligible?

Yes.  Not only "French," but an Olympic alternate from France and a French citizen.

Pretty sure she was a US Olympic alternate even though she was born in France. I assume that she became a US citizen through marriage. A lot easier to make the US team than the French team in Judo

I thought a French alternate, but I could be wrong.  Woman who beat her did not make weight.

Rumor is that Cormier slid in her DMs and asked if she wanted a Golden Corral the night before weigh-ins and they snuggled in bed the next morning with five orders of room service French toast

Nope.  Simply need to be a national of the country being represented by the respective NOC (National Olympic Committee).  Those who have multiple nationality have the option to chose which NOC they will represent.  If an athlete that has previously competed in continental, regional, or world events decides to change countries, they must wait three years before representing the new country in such an event.  See rules #40 and #41 (pages 80-81) in the linked document.
