Very Nice (Chicago) today.  Pretty bad yesterday.   Took my kid to his fav concert last Night and it was almost cancelled due a huge storm and lots of lightning.  Lots of trees down on my street.  When I came home two squad cars were sitting lights on just blocking the street they said they were worried drunk drivers would not see them and harm themselves or other stuff when crashing into them.

Ya.  I wish I took a photo last night.   The angle the tree fell at just missed two cars.  I have no idea how they both got that lucky.   So not only did no one get hurt it looks like the only damage was to the tree.

Irony is.   It’s been a good two days ish and the large tree…….    it’s still in the middle of the street.  I sometimes love the city of Chicago lol.

Recently got back from UT visiting my son and my sister.   Both are doing well.   They live right on the Wasatch front which is incredible to look at .   To be able to see that everyday coming out the front door is just heaven on earth.

My son wanted a seafood brunch so we’re out to get crab legs.  Shrimp.  And whatever else looks good

Went to the WorldFest in Louisville and swung by the park - I always forget to take a photo with Rose, finally managed to grab one with my son

Almost done.   
 

I got a few lbs of beef bones and made a 12 hour hour beef stock with the bones  mirepoix tomato paste and some aromatics.    
 

today I smoked 6 lbs of chuck roast and some short ribs.   Then braised them in a consume with the stock above and some dried guajillo and Arbol chilies.   
 

Shredding the beef soon gonna make some quesa birria shortly

I can’t upload unfortunately.   Maybe I’ll create a fake Twitter account just to post food pics on to post the tweets lol.   
 

im chillin the consume now to extract the fat to fry the corn tortillas in.   I actually made a double meat batch as my son can eat like a horse lol.  
 

One good thing about Chicago is ethnic grocery stores.  I get the good good salsa from the Mexican grocery stores.   I make some sometimes too but I can’t compete lol
