Ya I cooked the steak in tallow I make …. And then cooked the eggs in same cast iron. I made some fried potato’s where I par boiled them and crisped them up in butter and another cast iron on the grill. And sautéed up a bunch of red bell pepper and onions. Avacado weren’t ripe so I skipped that. 2

headshuck Posted May 11 Posted May 11 Question for you… I bought some Ghee to use to sear meats after Sous Vide. I’ve read it has a higher smoke point than olive oil or butter, a nutty flavor and isn’t bad healthwise. How does it compare to tallow?

A lot of the time with seafood. (Pan seared scallops). Can’t go wrong with either imo. Ghee has a decently higher smoking point too. also it is often cheaper to make your own ghee if your so inclined. maybe it depends on what your searing. I almost bought some duck fat today.
