Where does this come from?  A poster posted a sample 6000 calorie diet that was vegan.  It wasn't directly attributed to Kueter.  It seems like a strange choice to post as a potential diet.  I would imagine approximately 100% of NFL linemen are omnivores.

Also, it is highly unlikely the Iowa heavyweight is an omnivore because he isn't posting about being vegan a minimum of once a week on social media.

I guarantee you are right about this. There is NO WAY that he is eating 6K vegan calories.

Olive oil, peanut butter, mixed nuts (low sodium if possible), potatoes are some of the most common ways to get vegan calories I believe.  but you're right it depends on a person's diet.  Seth Gross was on the all carnivore diet, so he hasn't eaten anything plant-based in several years at this point.  He seems to still be alive haha.  I think humans are very adaptable, so our diet can be more self-directed to remediate whatever issues we may have going on personally.

I was sort of half joking.  I’m not on the Seth gross diet.  I like me some Brussels sprouts.  Asparagus.  Broccoli.  Green beans.  Spinach etc.   but I do eat red ish meat almost daily.   The ish is pork chicken or lamb or other meat which may not be “red” but it’s still meat.

RAAM is a serious ride. Takes a level of self determination that most people will never be able to muster. Kudos to anyone who even attempts to qualify for that race, much less finishes or places.

I'm pretty meticulous with my nutrition on my long rides, but couldn't imagine actually executing a nutrition plan on something as mentally and physically exhausting as RAAM.

In two person team Martin & Jay finished 3rd in division (7 day 4 hrs) and 4th overall in two person.  As I recall the teams ahead of them had sponsors, they were self funded.  ~3 years later Martin won the solo masters.  He wrote a book on training approach, nutrition etc.  I don't recommend the book for Keuter.
