I don’t know much about MMA, but I do understand that it offers some athletes fame and money. And I assume it also comes with the potential for brain injuries  

Anyway, which (if any) 2025 seniors have announced plans to pursue MMA?

Seems less and less going into MMA. When MMA was a free for all and everybody winging from the hip wrestlers did awesome. A lot more specialized training going on for younger people and to start learning BJJ and striking at 24 years old just puts them pretty far behind IMO. Plus getting punched and kicked in the head isn't pleasant.
